Veggie Flatbread Pizza
Flatbreads are called to be the earliest forms of pizza and Sandy loves them. This evening Rihaan had his soccer classes and I had to make something quick and savory to eat before we leave. I saw the flatbreads in the refrigerator and tada, I knew what I am making. Generally, flatbread pizzas are one of the easiest and quickest to make, the only thing you need to care about is your sauce and the toppings. Most often you use alfredo or marinara sauces with flatbreads but I had none of them so decided to create my own sauce. It is a great option for a quick meal and Rihaan loved it too, so it’s definitely kid friendly which has been the request off lately from many of you.

Ingredients:
A flatbread
Sauces –
1 Tablespoon of chipotle sauce
1 Tablespoon of caesar sauce
1 Tablespoon of roasted pepper sauce
Toppings -
Some small cubes of paneer
Some spinach leaves chopped small
6-7 basil leaves chopped small
3 Yellow mini pepper (or ½ yellow pepper)
3 Red mini pepper (or ½ red pepper)
5 Asparagus
3 Kosher baby dills chopped small (You get these in bottles in stores)
Cheese -
½ bowl of shredded Italian cheese
7 Fresh mozzarella cheese balls
Spices -
Salt to taste
Oregano to taste
Chili flakes to taste
RECIPE :
1. Take a flat pan and roast the red and yellow peppers, ensure they are burnt and have chars in them. Slice them into thin slices and keep them aside.
2. Roast some asparagus for 3-4 mins, chop them into small pieces and keep them aside.
3. Take the flat bread, apply a layer of the sauces as its base.
4. Toss the toppings on top and spread them equally over the surface, add the cheese on top, sprinkle the spices on top.
5. Preheat the oven at 425 degrees and bake the flatbread at 425 for 12 mins.
6. Take out and serve hot with some salad.
Serve hot … kids love it ..:) Caution – It is very hot.
You can also add grilled chicken if you love your meat in the pizza but I prefer this one with Paneer.
