Veggies in Garlic Lemon sauce

We eat a lot of baked vegetables in our household, they are healthy and aren’t too difficult to make generally. We make dried and moist baked veggies both, experiment a lot with the sauce and the ingredients. This sauce is something which I thought would work well as lemon – garlic and butter goes well and is used in many dishes using salmon. Surprisingly it tasted a lot better than I thought and hence this recipe gets a space here, this is a good dish and can be a good substitute for your regular dinner.

Cuisine – Italian, Indian

Prep Time – 15 Mins.
Cook Time – 38 Mins. (includes 20 minutes of oven time)

Ingredients:
8 Tablespoon of butter/1 butter bar
10 Garlic pods smashed
1 Teaspoon of Pepper Corns
Some fresh parsley chopped small
1 Teaspoon of cumin powder
1 or 2 lemon (depends on your choice)
Some cherry tomatoes


Veggies -
3 Small potatoes cut into half
2 big potatoes sliced thin
1 Bell pepper cut into medium pieces
½ Yellow Squash sliced thin
4 mushrooms sliced thin
1 small broccoli, separate out the florets
½ Red bell pepper sliced into thin long
½ Zucchini sliced thin
3 Asparagus

RECIPE:

Sauce –
1. Add a Bar of butter in a Pan and bring it to heat so that the butter melts.
2. Add the garlic and pepper corns into the pan, mix and cook for 5 minutes in medium heat.
3. Add the parsley, some salt, cumin powder and cook for 3 minutes and your sauce is ready.

The final dish -
4. Spray some oil in a Grill Pan.
5. Add all the Veggies listed in the ingredients section into the pan.
6. Grill the veggies in medium heat, keep stirring and mixing the veggies. Do spray some oil in between to prevent them for burning. Do this for 5 minutes.
7. Now add the sauce and mix them thoroughly.
8. Throw some cherry tomatoes, squeeze the lemon juice, add some garlic powder and mix again.
9. Now set the temperature to 350 degrees and bake the veggies in the oven for 15 minutes.
10. Broil at the end for 3-5 minutes to get some crust on the top.
11. Take the veggies out and enjoy it hot.
