Paneer Sathe (Indian style Paneer Satay)
Our days back in Pune, we used to visit a nearby garden restaurant – Shivanjali a lot. It was a Udipi style restaurant and for a change I used to love the Vegetarian starters there more than the non vegetarian ones. It was there I had first tasted this dish and it was love at first bite .This is also common dish these days in the Menu of a lot of Indian Bengali wedding dinners. I am presenting to you a simplified version of the dish which is very easy to prepare, my intention is to make it a popular item in your kitchen too.
Interestingly while writing the recipe in this blog I got a message from Geeta that she was planning to cook for Devs bday and I asked her to make this for his Birthday Dinner. She prepared a total platter of exquisite looking dishes and this guy was in there too. This page is dedicated to this lovely couple.

Prep :10 mins.
Cooking :
Paneer Grill – 7 minutes.
Paneer Fry – 30 mins.
Paneer Sathe – 12 -15 minutes (You can prepare the sauce in parallel while frying the Paneer and save time)
Ingredients:
1lb or 450 Gms of Paneer.
Canola Oil
2 spoon of Coriander powder
1 spoon of Turmeric powder
2 Spoon of Chilli powder
Salt to taste
2 Green chilli cut into half
½ spoon of black pepper seeds.
1/4 thinly sliced Onion
2 egg yolks (Optional for vegetarians)
1 cup of rice four
1 spoon of corn starch
½ spoon of Coriander seeds
4-6 cloves of Ginger (Smashed and chopped into small )
1 inch of Garlic cut into long thing slices.
2 Red Dry chillis
3.5 spoons of Soy sauce
2 spoons of Green chilli sauce
2 spoons of tomato sauce
2 spoons of Chings Schezwan Chutney (Optional)
3 spoons of white Sesame seeds.
1 Red bell pepper (Optional to Garnish)
Some Onion rings (Optional to Garnish)
RECIPE:
Paneer Grill -
1. Take a Grill Pan and spray some oil in it.
2. Spread the paneer in the pan and start cooking .
3. Sprinkle some Coriander and Chilli powder in the paneer and spray some oil on top.
4. Cook it for 3 mins in medium flame and turn in around. Cook for 3 more minutes.
5. Ensure the paneer doesn’t stick to the Pan, you just want a little charred crust on it.
Paneer Fry -
1. Take a bowl , add 2 egg yolks (Optional for vegetarians) , one spoon each of Turmeric, coriander , chilli powder, 1 cup of rice four and 1 spoon of corn starch.
2. Add a little water as needed and whisk them together to prepare the batter. Make sure it’s a thick batter as it needs to coat and stay around the Paneer.
3. Take the paneers now and apply the batter around its surface equally. Keep it aside for 15 mins.
4. Take a wok, add some oil to it and start frying the Paneer. Use a tong to handle the paneer so you do not disturb the coating around it. Shallow fry or Deep fry is a choice, I leave that you.
5. Take the Paneers out when they appear Golden brown, you can keep them in a plate covered by a paper towel to drain the extra oil
Paneer Sathe –
1. In a Pan pour some oil and start heating it.
2. Add the Onions, Green chilli , Coriander seeds, Black pepper corn, Ginger and Garlic and fry them for 3 minutes.
3. Ensure they are a little hard , don’t let the onions soften out as you need some crunch on them.
4. Add 2 Red Dry chillis broken into half. Add 3.5 spoons of Soy sauce, 2 spoons of Green chilli sauce and 2 spoons of tomato sauce.
5. You can also add 2 spoons of Chings Schezwan Chutney into it. I love using it in this dish but this is an Optional step.
6. Add the mix together and taste and then add some salt as required. Remember the sauces contain some salt so you should always taste the saltiness of the dishes while using them before adding extra salt on it. Cook for 4 minutes.
7. Sprinkle 3 spoons of white Sesame seeds and mix them together.
8. Now carefully place the Paneer and mix the sauce you just prepared over the paneer.
9. Let it cook for 2 more minutes and then add some Red bell peppers to garnish and close the lid.
10. Sprinkle fresh onion rings before serving.

*** You can also stick the Paneer with some Capcicum(Green bell peppers) , Onions and Tomato slices in a skewer and Fry it with the coating and then apply the sauce to it to make it more visually appealing but I prefer it this way.
