Paneer in almond and coconut milk sauce.
Friday evening was paneer night, yeah we decided to cook everything with paneer . This is a recipe I developed then, while wanting to cook an Indian curry which is slightly unconventional. I first chose the color of the dish to be white and then backtracked from there to develop the recipe.
This dish is a little sweeter for my palate but is a good option for a change in case you are a Paneer lover. The use of almonds adds a little texture, and the coconut milk adds the creaminess you crave on your paneer gravies.

Ingredients:
1 Onion, chopped small
1 Star anise
1 Teaspoon of shah jeera
25 almonds
1 Lb of paneer cubes
2 Tablespoons of ghee(clarified butter)
1 Teaspoon of white pepper powder
1 Teaspoon of coriander powder
½ Teaspoon of garam masala
1 Cup of coconut milk
Salt to taste
Some kewra water
RECIPE :
1. Take a pan and pour some ghee in it, bring it to heat.
2. Add the onions, shah jeera and the star anise and sauté until the onions are caramelized.
3. Now take the mix out into a blending jar, keep the star anise aside , and blend the onions into a paste.
4. Take 25 almonds in a grinder and grind them into a powder and keep them aside.
5. Take the paneer cubes and sauté them in butter and keep them aside.
6. Take a pan, bring it to heat, add ghee and toss the onion paste , white pepper powder , coriander powder, garam masala ,all the almond powder prepared previously and mix them .
7. Now add some coconut milk and bring to boil.
8. Toss the paneer cubes, salt to taste and cook for 5 mins.
9. Sprinkle some kewra water and turn off the stove.
Serve hot with some Naan Bread
