Naan Pizza Bites
I am really out of names for this dish , I am calling it Naan Pizza Bites as I have used Mini Naans to make this dish and have used several toppings like in a Pizza. I used the mini naans from Stonefire (You can order the same from amazon, the link is in the page below ) , this can also be done using home made Naans of Flat breads.
I had first made this dish when we had some friends home and a lady said – “Can you make us something that surprises us?” I took the challenge but had no idea what I was supposed to make, so the first step is always to check the refrigerator and see what have you got. Then get your brain cells to work and think what can we try to make and lastly get into the real action of making the dish. It was also evening time and the sun was shining so wanted to make something that we can eat sitting in the patio , gossiping endlessly.
I myself was surprised with the vibrant and lively flavors I was able to generate on this dish and would definitely recommend you to try this at your home.

Prep: 20 mins. (This includes the sauce, veggies and the green as all of them can be done in parallel)
Cook : 20 mins
Ingredients:
3 Tomatoes
1 spoon of Hoisin sauce.
1 spoon of Soy sauce
1 table spoon of Schezwan sauce
Some Spinach
Collard Greens or any other greens.
6 spoons of olive oil.
12 Mushrooms (Shitake preferred)
Salt to taste
2 each of Yellow pepper
4 Green chillis.
1.5 Spoon of Cumin powder
½ bowl fresh Parsley chopped small
½ bowl fresh Cilantro chopped small
10 Naan mini bites.
5 Spoons of butter.
Mozzarella cheese balls – as you need it. Minimum 5 balls. Making it ½ per naan bite.
Pepper as required.
Paneer (Indian cottage cheese) - ½ lb.
Yellow squash – ½.
RECIPE :
Sauce –
1. Blanch 2 tomatoes and crush them in a bowl.
2. Add 1 spoon of Hoisin sauce , 1 spoon of Soy sauce , and 1 table spoon of Schezwan sauce to it. I prefer the schezwan sauce from Chings . Stir the same for the sauces to get mixed with the tomatoes.
3. Your Sauce is ready.
Greens –
1. Cut some Spinach (2 Fist ) , some Collard Greens , Baby Spinach and any greens you have . (You can use anything you have in your kitchen , this is just for the color and for the iron content green brings into your plates)
2. In a wok pour some Olive Oil and bring it to heat.
3. Add the greens , add some salt and sauté it for 3 minutes until the oil mixes on the greens and the color of the greens turns into Dark Green as shown in the picture.
4. Your greens are ready.
Misc Toppings –
1. There are no rules or mandates here but I would share the things I added , you can change the veggies based on what you have and they should still work.
2. Slice the mushrooms sideways.
3. Sauté the mushrooms in a pan with some olive oil.
4. Cut bell peppers (Yellow or Orange ) in round fashion and throw them in the same wok.
5. Sauté for 5-7 minutes and take them out and keep aside.
6. Cut Green chillis into half and throw them in a pan with some olive oil, just fry them for 2 mins and take them out and keep aside.
7. Cut 1 fresh tomato (roma) and keep aside.
8. Cut the yellow squash into semi circle shaped pieces and sauté them for 2 minutes in the olive oil.
9. Potato fans can boil a potato , cut them into small pieces and keep them aside. I did not add it sometimes makes things mushy and reduces the crunchiness you expect on some dishes.
10. All of these would act as your vegetable toppings.
Naan Pizza-
1. Take a Grill Pan and spray some oil on the same.
2. Place the Naan’s or the Naan Bites in the Grill pan. I would suggest you to cut the Naan into smaller bites while making this dish as that would make it easy to serve and eat.
3. Add ¼ spoon of butter on all the Naan Bites.
4. Add a spoon of the Sauce on all of the bites.
5. Add a little green on all of them equally.
6. Add chilis on a few of those (the ones you fried).
7. Add the veggies as toppings on the bites, you can just let them sit and do not worry about the quantities as they all would settle down.
8. Throw in some Mozzarella balls on top of the bites, one on each would be tasty but you take that call based on how much cheese you want to consume. Remember the thumb rule , the more the merrier 😊.
9. Sprinkle some Parsley or Cilantro leaves on top.
10. Sprinkle some salt now, some pepper as needed. Also sprinkle some Cumin powder.
11. Now shred some Paneer and throw the same on top as you can see in the picture below. (This step is optional but elevates the dish )
12. Add some tomato sauce at this time on the top, a little mustard helps too.
13. Bake the same for like 10 mins at 350 degress and then 5 mins for 5 minutes.
14. You should see the cheese , the sauces and the veggies melts and settles on the naan bread. This is when you take it out and serve hot.
This goes as a good appetizer and can also be used as main course as they are relatively heavy. Itadakimasu ….!!!
