Mediterranean Style Roasted Eggplant.
This flavorful and nutty starter is a go to dish in a lot of middle eastern towns.

Ingredients:
2 each of Yellow pepper
2 Red pepper
2 Habanero pepper
6 spoon of olive oil
Salt to taste
1.5 Spoon of Cumin powder
2 Indian Eggplant or the Baby eggplant
½ spoon Thyme
½ bowl fresh Parsley chopped small
½ bowl fresh Cilantro chopped small
½ bowl fresh Mint chopped small
¼ bowl Pine nuts
¼ bowl Sliced Almonds
½ spoon Sumac powder
¼ bowl of Greek Yoghurt.
RECIPE :
Side –
1. Take 2 each of Yellow, Red peppers and Habanero peppers and cut them into round pieces. Coat the pieces with some olive oil , salt and ground cumin.
2. Throw the mix of peppers in a pan and roast them in a dry pan. You can also grill the peppers and cut them into the mix and add the spices.
3. Your salsa is ready.
Eggplant-
1. Take the Indian Eggplant or the Baby eggplant and cut them into thin round pieces.
2. Coat olive oil on both sides of the egg plant, sprinkle some thyme, freshly chopped parsley, freshly chopped cilantro, and fresh mint on the eggplant.
3. Add some pine nuts, sliced almonds , ½ spoons of cumin and sumac powder (You can buy SUMAC from amazon, link in the page below) and salt to taste on the eggplant.
4. Place the eggplant in the oven and bake for 17 minutes at 375 degrees. Change the mode to broil and cook for 5 more minutes , this should help with the crust.
5. Take the eggplant slices out and serve them with the salsa prepared before. Garnish the dish with Greek yoghurt which is used as a sauce generally with these kinds of dishes.
Ideally these are eaten with Pita bread , they also serve as good starters.
