Spinach Fritter Curry

It is an Indian thing, when it rains we always long for a cup of hot tea (Chai) and some fritters (Pakoras). Now we make pakoras out of anything, potatoes and other veggies, even chicken and the rules are simple. You always make the fritters using a batter made of gram flour or besan and then spice it up to your taste.
So this evening was no different, very lazy owing to the gloomy weather outside, thus I decided to make some fritters. I just thought of twisting this fantasy and bring it to our dinner table instead. The idea was simple, cook a Fritter Curry. I decided to use spinach and pine nuts for my fritter and a tomato-based curry sauce.
The resulting curry tasted great and hence I am sharing it you all, it’s quick to cook and you should definitely try it .

Ingredients:
Some spinach leaves chopped medium
1 Tablespoon of pine nuts
½ Onion, chopped small
2 Tomatoes, chopped small
2 Teaspoons of coriander powder
1 Teaspoons of curry powder
Cilantro leaves, chopped small


Batter -
2 Cups of gram flour (besan)
1 Teaspoon of carom seeds (ajwain)
Salt to taste
1 Teaspoon of turmeric powder
1 Green chili chopped small

RECIPE :

Fritters -

1. Take a mixing bowl and add all the ingredients listed in the batter above. Pour a little water and mix them together. Whisk properly ensuring there are no lumps and the batter is consistent.
2. Add the spinach and pine nuts and mix them with the batter.
3. Take a deep bottom pan, pour oil in it and bring it to heat.
4. Use your hands to take some spinach together with the batter and pour the same in the oil.
5. Use a tong to turn and fry them for 7 minutes each side and take them out. The fritters or palak pakora are ready.

Curry –
1. Add some oil in a pan and bring it to heat.
2. Toss the onions and sauté until they are completely caramelize.
3. Toss the tomatoes chopped small, coriander powder, curry powder, salt and cook until the tomatoes start to melt.
4. Now add some chopped cilantro leaves, little water and bring to boil.
5. Toss the spinach fritters in the pan and cook for 2 mins, turn them carefully, cook for 2 more mins and then turn off the stove.
