Mushroom Bhoona Masala

Bhoona Masala is a popular Indian gravy or sauce prepared using tomatoes, onions, ginger, garlic and regular pantry spices. Bhoona in Urdu means roast or fried, it means deep fried in Bengali so the word is a little bit of everything between roasting and frying. The origin of bhoona can be traced to Bengal but it is today the basic base of many Indian curries with subtle differences in the use of spices based on the geography. The actual bhoona is made by sauteing and frying the items in the wok itself but in the modern day, we use blenders to make our job easy. The bhoona sauce can be refrigerated and stored for making quick Indian curries as it stays good when refrigerated for a good period.

Mushroom bhoona masala is an Indian curry using the same “Bhoona masala”. The immersion of mushrooms infuses its taste in the curry which adds to the taste of the gravy and makes it a great dish to serve. This is also completely vegan and one of those which are very easy to cook.

Ingredient:
Canola Oil
1 Teaspoon of cumin seeds
1 Big onion sliced thin
1 Tablespoon of ginger garlic paste
2.5 Tomatoes diced small
½ Teaspoon of cinnamon powder
Salt to taste
½ Teaspoon of soy sauce
1 Lb of mushrooms.

Spice mix –
1 Teaspoon of turmeric powder
½ Teaspoon of red chili powder
1 Teaspoon of cumin powder
1 Teaspoon of coriander powder
1 Teaspoon of garam masala powder
½ Teaspoon of chat masala powder

RECIPE :

1. Pour some oil in a pan and bring it to heat.
2. Add the cumin seeds and onions in the pan and sauté them until the onions are caramelized.
3. Take a small bowl and pour the ingredients listed in “Spice mix” in it. Use a spoon to mix them together properly.
4. Once the onions are caramelized, add the ginger garlic paste and cook for 2-3 minutes.
5. Add the tomatoes, cinnamon powder, the spice mix prepared in step 3, sauté and cook until the tomatoes melt into the mix.
6. Add salt to taste, mix and the bhoona masala is ready.
7. Take it out in a blending jar and blend them into a thick sauce.
8. Pour the sauce back into the pan and keep the heat in low to medium, pour the soy sauce and stir them together.
9. In a separate vessel, add the mushrooms and 2 cups of water and bring it to boil. Keep the stock aside as that would be used in this dish as well.
10. Now pour the mushrooms in the pan , add 1 cup of the mushroom stock from step 9 in the pan and mix them together while stirring. Bring it to boil and turn off the stove.

Your dish is ready, and you can serve it with naan bread or rice. Garnish the dish with some fresh cilantros.
