Minestrone Soup.
I am personally not a big fan of Vegetarian soups, I prefer some Meat in my soups but this one is an exception. So we love this place called the Old Spaghetti factory , it’s a cute restaurant with some out of the world décor and brilliant Italian food. They serve a three-course meal at the cost of One entrée and Minestrone Soup is an option that you have.My love with minestrone began at this place as generally all my life I used to skip this one and used to order some Meat based soup but this life changing event happened at this place. I would also recommend the Mules they serve in this place , too good.
This is a all vegetarian soup normally made with left over veggies and is an easy one to cook. The natural taste of the vegetables almost cooked in a stew manner gives it a brilliant taste. It should be a must try Vegan soup at your home

Ingredients:
Soup Mix -
Carrots
½ Zucchini diced into medium pieces.
Onions
Tomatoes – 2 big chopped into medium pieces.
If you have tomato puree use that for color (Optional)
Celery
½Yellow Squash diced into medium pieces.
Garlic Chopped – 4 cloves.
3 small potatoes – cut into small pieces.
1 lb canned kidney beans.
1 lb Paneer cut into small pieces. (Optional - Do not add this and make it Vegan)
Fusilli pasta – 100 Gms (Any other pasta would also do as long as it is not a spaghetti)
Italian Seasoning – Sprinkle to taste.
1 Bay leaf.
Do not worry the more the merrier , you can add more vegetables if you would like.
Others-
1 scoop of butter
Olive Oil
Salt to taste
1 chilli
Pepper to taste (Optional)
RECIPE:
1. Add all the ingredients listed under Soup mix in the Instant Pot.
2. Add a scoop of Butter and Olive oil in the pot and start sautéing.
3. You should ideally sauté veggies separately for better taste but my version is a Lazy one and I am choosing the lazy easy option.
4. Saute for 3-5 mins.
5. Add salt to taste and the chilli. You can also add pepper here.
6. This is the last call, so if you love some spices like Cumin, Sumac, thyme etc – Go for it and top it up. I did not add any additional spices here.
7. Pour water to the level of the veggies.
8. Change mode to Pressure Cook and cook in the Instant Pot for 5 minutes.
9. For Pressure cooker users, cook it for 1 whistle and then close the stove. Let the pressure go off and then serve hot.
