RECIPE :Falafel –
1. Soak Green peas overnight and then boil them so that they can be smashed into a mushy paste. Add two spoons of Corn flour to the paste, salt to taste, Coriander powder , 2 green chilli thinly sliced and mix them thoroughly.
2. Make flat cakes out of the Falafel mix with your hands, you can use a bowl or tumbler to make the edges sharp and beautiful.
3. Take a flat pan and pour a little oil, heat the oil.
4. Place the falafel cake in the pan and shallow fry the cake for 12 minutes. Turn them aside carefully while shallow frying the cake so that you do not break them , cook them properly.
Curry -
1. Take a Wok/Kadhai , add some oil and start heating the oil.
2. When the oil gets warm, add a spoon of cumin seeds , 2 cardamom pods, 1 cinnamon stick, 2 cloves and a spoon of coriander seeds. Keep sautéing until you smell the aroma coming out of the spices.
3. Add Onion Paste, Ginger Garlic paste into the wok and keep frying until you see oil coming out of the mix.
4. Add tomato puree (1.5 tomatoes) , add a spoon of Kitchen King (All Spice will do to) , a spoon of Cumin powder, chilli and turmeric powder.
5. Spray a bit of asafetida , half spoon of dry mango powder, salt to taste and keep cooking the mixture.
6. Once the sauce seems to be cooked, add a little water and bring it to boil.
7. Now place the falafels into the wok and let it cook for 3 minutes and close the stove, close the lid for the sauce to get absorbed in the falafel.
8. Serve in the next 10 minutes , ensure this step else your falafels might break.
This dish amalgamates the taste of Mediterranean cuisine with Indian and should be one of your must try’s.
