Bagara Mixed Veg
Indian cuisines owe a lot of its food to the Mughal Empire and one such dish is the Bagara Baingan which is inspired by the dishes from Taskent Uzbekistan. Bagara means tempering which is a technique used in a lot in the Indian Sub Continental style of cooking where you dry roast the masala and then cook it later in Oil.
Interestingly Bagara translates to the following in the various Indian languages –
In Tamil, thaalippu (தாளிப்பு). It is also called thalimpu (తాళింపు) or popu (పోపు) in Telugu; তড়কা (torka), বাগার (bagar), or ফোড়ন (phoron) in Bengali; tarka (ਤੜਕਾ) in Punjabi; chaunk (छौंक) in Hindi; oggaraṇe (ಒಗ್ಗರಣೆ) in Kannada; फोण्ण in Konkani; vaghaar (વઘાર) in Gujarati; phodni (फोडणी) in Marathi; baghaar (بگھار) in Urdu; and baghaara (ବଘାର) or chhunka (ଛୁଙ୍କ) in Oriya.
Here is my rendition of this very famous Hyderabadi dish but with subtle changes and of course using Vegetables instead of using Deep fried Egg plants. Please try it at your kitchen and let me know in the comments below.

Ingredients:
3 Fistful of Peanuts.
2 potatoes
6-7 spoons of grated coconut
2 Spoons of White Sesame Seeds.
Oil.
1 Whole Onion cut into medium pieces.
2 Spoons of Ginger Garlic paste
2 Green chilis cut into halves.
Little Mace / Javitri (Optional)
½ Spoon of Turmeric powder
1 Spoon of Red Chili powder
1 Spoon of Cumin powder
1 big Spoon of Coriander powder.
2 Spoons of Garam Masala.
Curry leaves – 8 (Optional)
1 Bay leaf (Optional)
Whole Spice-
1 Spoon of Mustard seeds.
1 Spoon of Cumin seeds.
1 stick of Cinnamon
2 Cardamom cloves.
4 Cloves.
Veggies – (It is your choice, you can add veggies as you like)
Brocolli – ½ Cut into medium pieces.
2 Carrots sliced round.
5-6 Pieces of Mushrooms.
Some Beans
¼ red bell peppers cut into slices.
Shallots
Yellow Squash – 1 cut into round pieces.
RECIPE:
Bagara Paste
1. Take a flat pan, turn on the stove on medium heat.
2. Add the Peanuts and start dry roasting them
3. Take the peanuts out when they show burns , and smell roasted.
4. Peel the peanuts.
5. Add the peanuts into a Blender Jar.
6. Add the sesame seeds in the same Pan and let them flutter.
7. Once they seemed done, take them out and add them to the same Blender Jar.
8. Add 6-7 spoons of grated coconut and roast them until they are brown.
9. Add them to the same blender, pour some water in the Jar.
10. Blend them together to form a thick paste.
Potato Fry
1. Cut 2 potatoes into medium sized peices and marinate them with 1.5 spoons of Turmeric powder for 10 minutes.
2. Fry the potatoes for 5-7 minutes to get a fried layer on its top. You need them like 60% cooked , the remaining part will be cooked in the curry.
Curry -
1. Take a deep bottom Pan and pour 3 spoons of oil in it.
2. When the oil heats up, add the whole spice and saute them for a minute or two.
3. Optional Step – You can also add Curry leaves here, I don’t as I use it for the tadka at the end.
4. Now Add the onions into the pan and saute them until they are golden brown.
5. When the onions show the required color, add 2 Spoons of Ginger Garlic paste and the chilis.
6. Keep stirring and sautéing them for 3 more mins now.
7. Add a little mace in it – Optional step and saute for another minute.
8. Now add the Turmeric , Chili, Coriander and Cumin powder and saute them for 5 mins.
9. Keep stirring so that the mix doesn’t stick to the pan, you should start seeing the oil coming out of the mix by now.
10. Add the Bagara Mix prepared above , mix it properly with the masala.
11. Add some salt and let it cook for 5 minutes.
12. Now add the Veggies and the potatoes, add ½ cup of water.
13. Add 2 Spoons of Garam masala and let it cook for 10-12 minutes and your dish is ready.
14. Serve it with Rice and enjoy ..!!!
Optional Step –
You can add some Tadka using Curry leaves, bay leaves at the end.
