Dhaniya Gosht (Goat meat in cilantro sauce)

I have had Dhaniya Murgh (Chicken in cilantro sauce) back in India and have absolutely adored it. It is a special dish as the blend of fresh cilantro and spices marries together to generate a distinct taste in the sauce, and the chicken cooked in it is just magical. Dhaniya Gosht is a take on the same, I developed the sauce using ingredients which would go good with Coriander/Dhaniya/Cilantro and used the sauce to cook the goat meat. Tender goat pieces with this greenish color gravy is a curry to die for. I have also added some spinach to my sauce to get the desired green color in the curry. This is an Instant Pot recipe, but you can cook the dish in a pressure cooker as well and I have mentioned the steps for both in the method below. Indians generally like tender and well-cooked goat pieces and hence I cook for 30 minutes in an instant pot. You can adjust it to 20 minutes if you want your meat to be chewy or 40 minutes if you want them to just melt in your mouth. The texture, color and the taste of this curry is very different than your normal weekend goat curry and I would definitely recommend you to give this a try.

Ingredients:
Some oil
1 Onion chopped small
2 Teaspoons of coriander powder
1 Teaspoon of fennel seeds
2 Lb of goat meat
Salt to taste
2 Teaspoons of curry powder

Green Paste
Handful of spinach leaves
1 Green chili (add more if you like spicy curries)
1 Bowl of fresh cilantro leaves
4 Cardamom pods
5 Cloves
1 Cinnamon stick
2 Mace leaves
1 Tablespoon of coriander seeds

RECIPE :

Green Paste
1. Take a blending jar and add the ingredients listed in above in the “Green Paste” section into it.
2. Add a little water as necessary and blend them together into a green colored paste. Keep it aside.

Mutton Curry
1. Take a pressure cooker or an instant pot, bring it to heat and pour some oil in it. If you are using an instant pot, use the sauté mode.
2. Add the onions in the pot/cooker, sauté them until they start turning golden brown.
3. Add the coriander powder and fennel seeds sauté them for 2 minutes, take them out into the same blending jar when the onions look caramelized.
4. Blend them into a coarse paste and keep aside.
5. Now pour some more oil in the pot and add the mutton in it. Cook the mutton for 5 minutes (in sauté mode for instant pot), stirring continuously.
6. Pour the paste into the pot and mix them together.
7. Add salt, curry powder, cup of water, close the lid and pressure cook for 8 whistles in a cooker or for 30 minutes when using an instant pot.
8. When it is cooked, let the pressure release by itself and then open the lid. Mix the meat together with the curry and serve it hot.

You can garnish this using some cilantro leaves and zucchini stripes as shown in the picture of the video and serve it with some Naan bread or a simple bowl of white rice.
