Cajun Chipotle Salmon
This is an exclusive baked salmon recipe using a new sauce. I love amalgamating flavors and for this recipe, I played around with Mexican and Creole palates to bring out the best for my salmon. The outcome was a sauce with flashes of chipotle and a hint of cajun flavors in it.
The idea of this recipe is simple - prepare the sauce using your pantry items, marinate fresh salmon fillets , bake and broil . I made some extra fillets so that I can also have them in my dinner, always a salmon fan you know..!!!
This fish tasted extremely great with some Caesar salad in the side during my lunch. During dinner, I ate it with some Jeera rice and it tasted even better. I later realized that baked salmons are generally great with plain jeera rice, and it is one of my favorite combinations today.

Salmon Bake with a Creamy Pesto Sauce.
While Dad was in awe praising the dish in Food Network, I thought of giving the cheff some competition:) I finished the plate before the episode was over on TV as I cooked the stuff in parallel and Dad gave me look of awe, so did Mom who is basically my Idol when it comes to cooking. They loved what was served to them and I was a proud son.
This dish was the winner of an Online Cooking contest . The contest was judged by Master Cheff India Jury - Chef Banerjee
Salmon in Garlic cream
Salmon with anything is great but salmon with cream is special. This is one of my favorite recipes and every time I make it with some sort of a twist, this particular one includes simple veggies to enhance the nutrition factor of your plate. The dish uses minimal spices and is low on heat and hence is everybody’s favorite. Again this is an exclusive recipe from my kitchen and I hope y’all like it.

Tilapia Tikka Masala
Tikka masala has become a brand here in the States, and everyone thinks we Indians eat it at least once in a week in our homes. I want to clear the air here, Tikka Masala although so much Indian it sounds is a British (Indian) Dish.... yes you heard it right..!!! It was first made in the UK. It is a rip off dish which closely resembles Moti Mahal's famous butter chicken but was first cooked by a Bangladeshi Chef in the UK and then was later adopted by restaurants all over the world as the most famous Indian dish in their menu. I have to give it to Tikka Masala though, its probably the most sought out dish outside of India by Non Indian folks , thanks to its creaminess , it works wonders on a lot of palates. I also remember a lady joining a Meeting and sarcastically mentioning her name in the Bridge as Tikka Masala . Well no matter where you are , a little racism is always there.
So we planned to make Fish this evening only to realize the fish has gone bad and we had to throw it away. I was hell bent that I am eating fish today, so took out the Frozen Tilapias from my Deep Freezer, thawed them and made this Quickfire Tikka Masala. Trust me , the friends who were staying with us for the week tasted the Fish and just loved it, it indeed came up so good.

Apple n Lime Grilled Salmon

This was a quick fix for a weekday dinner , Sandy was going to eat oats n chia n some healthy bowl whatever and she asked me to order to go for the boys in the house . I just didn’t feel like doing a togo so made a quick trip to @aldiusa , got some fresh (never frozen) Atlantic Salmon and made this dinner for us .
Sharing it here as we enjoyed the taste of it , the sweetness from the apple and the acidity from the lime balanced the flavors and kept them at bay not letting either of them overpowering the other.

Salmon in Basil Pesto - Chili Garlic sauce.
This is a dish that serves as your go to when you want to eat a meal which is extremely healthy but at the same time enormously tasty. I prepared it while experimenting with salmon marinades for quick and easy dinners. I love to do baked salmon meals cause at the end of the day, they never go wrong - Salmon 🤟and this one is a prime example.
So I played around with two sauces – “Basil Pesto” from Italy and “Chili Garlic” from China and used them to cook Atlantic Salmons bought from Aldi for the base of the dish. I also added some veggies using the sauces to make it a complete scrumptious meal.
Sharing the recipe as it is super simple and can make your life easy. It is super kid friendly too and they seem to love it.

Moms Fish Curry
Bongs and fish curries is a match made in heaven. I grew up in a Bong family and hence fish curry has always been my Achilles’ heel. My mom can cook hundred’s of fish curries and she knows what should be the recipe for a specific fish. Every curry she makes, tastes different and distinct based on the fish that is being used in the curry and that is always my mom’s specialty.
The recipe I am writing here is one of the most famous dishes of hers not because of the taste but because of the speed at which she used to cook this dish back in the day. This can be served in less than 20 minutes if you have if you have good fast hands.
My dad is fond of fishes and he always wanted a fish on his lunch plate. So my mom used to come during the lunch break from office and cook it pretty quickly and serve the same to all of us. Everyone used to call it the Jhat-Phat Fish curry. This dish makes me nostalgic and I have wonderful memories of this growing up. I could never hit the bull’s-eye and cook like my mom but here is a try.
If you cook this one , please eat it with plain rice as it’s a Bong thing…!!

Battered Salmon Fry
There are days you want to eat fish but do not have the energy to pull out a big recipe, this one comes as a boon for those days as the dish is quick and easy and is very tasty. Salmon is readily available and should always be in our refrigerator for these kind of quick dishes, it is also a rich source of protein.
I had made this dish for this video primarily. There was a talent competition in my Company and you are supposed to post small videos of some activities. Cooking/Culinary skills obviously was a category and I decided to make this video to get 50 points for my team. I loved the recipe and hence decided to add it to the site and also in you tube. This is my first video there so ignore the mistakes, with time I should post better videos but the recipe is true to my heart and its a really good one that you all should try.
Baked Salmon Chipotle Ranch
Salmon is every fish lover’s favorite, a fresh fillet of salmon is a thing to die for any time of the day. I love baking salmon, I do have some basic recipes for salmon but I always experiment with sauces I use while baking them.
This is an easy recipe inspired by some Italian and Mexican dishes. The dish is simple, bake salmon using the Chipotle Ranch sauce and some herbs. You can pick and choose your own or follow mine, choice is entirely yours and every herb that you use will bring an element of itself into your plate.
I served it with a side of Guac, I used the same sauce to make the guacamole too. You can make it a full meal like I did by throwing in some veggies in the grill.
This is one of my weekday lunch favorites as you don’t need to monitor while cooking, you can attend a meeting while you get this ready for yourself and your family.

Tuna Steak Masala
Tuna steak is a popular dish in many parts of the world. It is a rich source of omega-3 and niacin and is considered a healthier alternative to beef steaks by many health pundits. Tuna steaks also sounds like a nice candle light dinner sort of a dish.
I got some Ahi Tuna recently from the market and wanted to make a steak which has some Indian influence in it. So I developed a new recipe, I call it the Tuna Steak Masala.
The idea of the dish is simple, prepare a masala using Indian spices and cook the steaks using the masala.

Palak Fish (Spinach Fish) is a green curry made using Spinach and a fish of your choice . I have used Tilapia in mine, this dish is rich in proteins and iron and is a very healthy dish that you can prepare in very quick time. It is a great recipe to look at and tastes great. My style of fish recipes always uses lesser spices keeping the essence of the fish alive.
