Garden Omelette (An Easy version )

An omelette in the morning to start the day is a bliss , breakfast is always said to be the most important meal of the day and Eggs have been its charm for ages. We do make a lot of different types of quick egg based breakfast meals and this is one of them. I made this for an online cooking competition for breakfast meals, although I did not win this one , I still thought of sharing this recipe with you all as it is easy and would make all your morning jobs easy. I have added some veggies, you can replace them and still would be able to make a great one for your mornings.

Cuisine - Indian, American.
Course - Appetizer, Main course.

Prep :5 mins.
Cooking : 20 Mins. (can be reduced if you can saute the veggies in parallel)

2 Eggs
1 Spoon of cumin powder
1/4 spoon of turmeric powder.
Oil
Spinach
4 small red and yellow bell peppers cut into round.
3 asparagus cut into three.
1/4 Zucchini cut into long slices.
Some cherry tomatoes cut into half.
Finely chopped Parsely
1 Sweet potato baked.
Fresh cheese.
Oregano and Italian Seasoning
Sauce of your choice.

RECIPE:
Eggs prep -
1. Break 2 eggs and mix it in a bowl using a whip or spoon.
2. Add 1 Spoon of cumin powder to it.
3. Add 1/4 spoon of turmeric powder to it.
4. Add Salt and Pepper and mix it together.

Garden Veggies Prep -
1. In a separate Pan , spray some oil.
2. Toss some spinach leaves and let them sauté for 3 mins.
3. Take them out and keep aside.
4. Add 3 asparagus and sauté them for 5 mins until you start seeing some charred layer on them.
5. Take them out and keep them aside.
6. Add the Zucchini and Bell peppers and sauté for 5 mins.
7. Take them out and keep them aside.
8. Sauté some Cherry tomatoes for 2 mins and then keep them aside.

Omlette -
1. Take a flat pan, add some oil.
2. Add the eggs and cook for 2-3 mins , let the omlette get 70% cooked.
3. Add some finely chopped parsley.
4. Add the veggies on top, spread them at one half of the omlette , watch the video for better understanding of this step.
5. Add couple of Baked Sweet potato fingers.
6. Shred some cheese on top.
7. Close the omlette , into half. Refer the video for better understanding.
8. Turn it aside and cook for 30 seconds and your dish is ready.
9. Sprinkle some Oregano and Italian Seasoning on top.
10. Add the left over veggies in the plate and enjoy with your fav sauce.
