Flavored Rabri
I have never been a baker or a dessert maker, I have always liked to cook entrees and appetizers as I always felt that is my forte. I do bake and make desserts occasionally but that happens only once in a blue moon.
Interestingly, I took part in a cold dessert making competition earlier this year, yes sounds so much unlike me but I did a recipe which I had created specifically for this competition. Surprise Surprise… I won the second price and I was shocked myself…..lol
The recipe was simple and was fueled by my love for Rabri and fresh fruits.
Cook the rabri, make some fresh fruit sauces and mix the two to bring in different colors and flavors to your sweets platter.
It is Diwali and you all need to make some sweets at home, wanted to share this recipe with you all if you want to try it at home.

Cook Time – 35 Mins.
Ingredients:
Milk – 6 Cups
Sugar to taste, I added 9 TSP
3 drops of Rose water
4 saffron strings
2 Mangoes
18 strawberries
30 Blueberries
Rabhri -
1. Take a heavy bottom pan and add milk to it and bring it to boil.
2. Keep the stove at medium low and keep stirring.
3. Make sure the milk doesn’t stick to the pan.
4. Cook for an hour, let the milk reduce.
5. Add sugar and rose water and cook for some more time.
6. You can add some saffron soaked milk too.
Mango –
• Cut 2 mango and start boiling it with ½ cup of water in a pan.
• Once this sauce thickens, let it cool.
Strawberry -
• Cut 18 strawberries and start boiling it with ½ cup of water in a pan.
• Once this sauce thickens, let it cool.
Blueberries –
• Cut 30 Blueberries and start boiling it with ½ cup of water in a pan.
• Once this sauce thickens, let it cool.
Final Step –
• Take the Rabhri and divide it in three bowls.
• Add the Fruit sauce in each of them and start stirring, do it for 5 minutes and make sure the fruit gets mixed and the rabri becomes consistent.
Serve it with fresh fruit toppings.
