Palak Chicken
This is a classic Indian dish and I have made the recipe easy by making it using “Chicken Masala” powder from any popular brand. This green colored nutritious dish is a thing to die for and the use of chicken masala reduces your cooking effort by 30%. Palak chicken works great when you have vegetarian folks at home too as you can make the same gravy and separate them out. One for paneer and the other for chicken and create two separate dishes out of a single base. I am sharing this easy recipe here as it is glutten free, very healthy, easy to cook and would help you all eat good home cooked food in a few easy steps.

Ingredient:
Some canola oil
1 Onion sliced thin
1 Teaspoon of ginger powder
1 Teaspoon of garlic powder
2 Tablespoons of chicken masala powder
1 Lb of chicken
Canola oil spray
1 Teaspoon of cumin seeds
1 Teaspoon of caraway seeds
4 Cloves
3 Bay leaves
1 Big bowl of spinach leaves
Chili powder for taste
Salt to taste
RECIPE :
1. Mix and marinate the chicken with ginger powder, garlic powder and 2 tbsp of chicken masala powder for 10 mins.
2. Take a grill pan, spray some oil, place it in a stove in medium flame and bring it to heat.
3. Place the chicken pieces in the grill pan and grill them turning them around for 20 minutes.
4. Simultaneously, pour some oil in another wok and temper some cumin seeds, cloves, caraway seeds and bay leaves .
5. Add the onion and sauté until they are caramelized. Take the mix out in a blending jar and blend into a paste.
6. Boil the spinach separately and blend them together with the onion paste. Use the same water used to boil the spinach while using the blender. This will ensure you do not lose the nutrients.
7. Pour the blend back in the wok, toss the grilled chicken pieces and bring to boil.
8. Add a little chili powder for the need of heat and some salt in the wok. Check the spice and add a little more of chicken masala if needed. Also, you can add some water for getting the desired consistency and thickness in your gravy.
9. Close the lid and let it cook in medium for 10 mins, turn off the stove. Your dish is ready.
Serve it hot with bread, roti or rice.
