Dhaba Style Dahi Chicken
This is a dish hugely popular in the Road Side Dhaba's (restaurants near highways) in India, the dish is a cheaper version of the all famous Butter Chicken and is considered a great chicken curry in many parts of the country. I have very sweet memories of having this one in Dhaba's with Dad when I used to travel with him on his conferences. The dish contains no fancy elements, just spices , yogurt and chicken and is a very simple dish to try out your hand in the kitchen if you are not a handy cook.

Ingredients:
Whole Spices -
Pinch of Shahi Jeera.
1/2 Spoon of Fennel Seeds.
1/2 Spoon of Coriander Seeds.
3 crushed pods of Cardamom.
2 cloves.
1 Spoon of cumin seeds.
1 inch of Cinnamon stick.
3 Bay leaves.
1/2 Star Anise.
1 Big Cardamom (black)
Powder Spices -
1 spoons of Coriander powder
1 spoons of Cumin powder
1 spoons of Turmeric powder
1/2 spoons of Chili powder
1/2 cup of Curd/Yoghurt.
3 Spoon of Mustard Oil , you can use Canola or Vegetable too.
1 Onion cut into small pieces.
3 Spoons of Ginger Garlic Paste.
3 Cut chilies.
1 whole Chicken - cut into Medium pieces. (1.5 pounds)
2 Spoons of Garam masala.
1 Spoon of Chicken Masala/ Garam Masala
3 spoons of Salt
1 tomato diced into medium pieces.
4 Cashew nuts. (Optional)
Dry Fenugreek leaves.
RECIPE :
1. Add the oil in a pan and bring it to heat.
2. Add the whole spices and saute for 2-3 minutes.
3. Add the Onions in the pan and fry it till it gets golden brown.
4. Add the ginger garlic paste and the Chilies and saute for 5 more minutes.
5. Add the powder spices and mix the masala nicely with the Onions for 3 minutes. Keep stirring so that you don't let it stick to the pan.
6. Add the chicken into the Pan.
7. Add Garam masala and Salt and cook it for 10 minutes.
8. Add the tomatoes now and cook for 5 minutes.
9. You should start seeing the water coming out of the chicken now. Add the beaten curd into the pan.
10. You can blend the cashew nuts with the yogurt in a blender and add it . (Optional)
11. Close the lid and let the chicken cook. Add some water if necessary to de-glaze. Stir occasionally.
12. Once the chicken is cooked , add the fenugreek leaves and close the lid. Turn off the stove.
13. Serve Hot with some Rotis.
